Mr. Bento Makes a Comeback

I don't know why, but I have forgone using my Mr. Bento lunch box for a really long time. I used to pack him up all the time with tasty lunches, and even got a few curious comments and questions from my coworkers. But ever since Christmas vacation, Mr. Bento has been sitting, alone and somewhat forgotten, in a kitchen cabinet. Maybe it's because the compartments can be annoying to wash (especially for my hubby), or because I stopped eating bento-friendly lunches. Regardless of the reason for Mr. Bento's sabbatical -- the bento is back!

I packed this guy with a healthy meal consisting of:
  • 1/2 cup 2% cottage cheese with a spoonful of pumpkin puree mixed in
  • a big spoonful of Rondele reduced fat spinach and herb cheese

  • a smaller spoonful of homemade pumpkin hummus

  • yummy fresh veggies for dipping

  • sea salt Melba Toasts, also for dipping but mainly for crunching!

Not only are bento boxes great for learning and exercising portion control, but they can be fun to make and eat. For some, bento lunch-creating has turned into an art!

  1. Yay for Mr. Bento! I've been on a bento sabbatical for a little while as well. My husband is really missing his bento lunches. Your lunch looks great. I'm definitely going to try the cottage cheese and pumpkin...that sounds good.

  2. Thanks for visiting, ChickenStamps! The pumpkin cottage cheese is one of my favorites. But then, I love a pumpkin version of just about anything!!
