Guest Post: Breakfast Burrito, Husband-Style

"In lieu of the more commonplace sobriquet," I present myself as a first-time guest-poster known to some of you as the Best Husband Ever. Henceforth, I shall be referring to myself using a number of first-person pronouns such as "I" and "me". Let us hope that this won't be too confusing. As an aspiring blog-starter-and-forgetter, I do not contribute much to the kitchen-related news that is found here on a regular basis. However, although normally I would not attempt to describe my culinary endeavors, I will attempt to do so here for the general betterment of the public.

So, as my entry into the guest-posting arena, I present a rather common dish of mine, which generally takes the form of a breakfast burrito. Unfortunately for all of us, I am not in the habit of taking pictures of my food, so for representative imagery we will have to make do with a related photograph in which I am cooking up some turkey kielbasa.

With most of my dishes, I still play far too loosely with fat and salt, and this one is no exception. I have found that my food preferences often lead me away from certain common ingredients, for better or for worse, and one thing that I have not learned to like in quantity is any type of traditional sausage. Nonetheless, I make my way around this unfortunate fact by using Jennie-O Lean Turkey products, which (although healthier) certainly contain their fair share of saturated fats, sodium, and cholesterol.

To begin with, I start some frozen shredded potatoes (from Costco) on the stove with a light coating of olive oil, making sure that the oil spreads out to cover the base of all the potatoes. This is the time to add pepper and any other spices that I might feel like. While the potatoes defrost and begin to cook, I dice a chunk of kielbasa into 1/2 cm sized cubes and whip up 2 or 3 eggs to add later. Once the potatoes have browned on one side, I flip over the lot and push them to one side of the pan. Into the other side of the pan goes the diced kielbasa, which can be pushed around for a while to relieve any boredom that the cook might be feeling at this time. Once the diced kielbasa and potatoes are almost done, it is time to mix them together in the pan and throw the whipped eggs on top. I mix the ingredients together thoroughly, getting a good scrambled egg consistency. Finally, I throw the whole mess onto a tortilla which has been prepared for the purpose. I like to keep the tortilla in the microwave and warm it up at the last second so that I can simply toss on the ingredients, turn off the heat, wrap up the tortilla, and start eating.

And there we have it. A reasonably simple breakfast that uses one pan, one bowl and fork/whisk (for the eggs), and a plate for preparing the tortilla. Not bad for cleanup and pretty efficient to make once you figure out the timing. As far as amounts of each ingredient go, I just wing it, so I couldn't give exact amounts except for eggs (which only varies based on how much I want to eat at the time) and the tortilla (I tend not to use fractional tortillas...that sort of thing makes it hard to wrap).

Breakfast Burrito

1 large flour tortilla
3/4 cup frozen shredded potatoes
1/5th of a Jennie-O Lean Turkey Kielbasa
2 eggs
Olive oil
Large quantities of black pepper (What? I like black pepper.)

  1. I like! You would fit in well down here, where breakfast burritos are a main staple for almost everyone. I am learning to be okay with a few a year, which has been an adjustment, but they are quite good :)
